Broiled Clams With Herb Butter Recipe

Ingredients
  • 1/4 tsp salt
  • 1 tbsp sliced fresh thyme
  • 1 garlic clove, minced
  • 1 tbsp sliced fresh chives
  • 1 egg yolk
  • 1/3 c sliced parsley
  • 1 1/4 c unsalted butter, softened
  • 3/4 c saltine cracker crumbs (about 15 saltine crackers)
  • 36 large littleneck clams
  • 1/4 tsp freshly ground pepper
  • 1/4 tsp hot sauce

Directions
  • Step #1 Beat butter at high speed with an electric mixer until fluffy.
  • Step #2 Add cracker crumbs, & garlic, egg yolk, beating until mixed.
  • Step #3 Stir in parsley & next 5 ingredients.
  • Step #4 Place butter mixture on wax paper, & roll this into a log 1 1/2-inches in diameter.
  • Step #5 Chill until firm.
  • Step #6 Open clams, & discard top shell.
  • Step #7 Loosen meat from bottom shell, & rinse in cold water.
  • Step #8 Cut butter into 1/8-inch-thick slices, & place 1 slice on each clam.
  • Step #9 Broil 5 inches from heat 5 mins or until golden brown.
  • Step #10 NOTE: Any remaining butter can be wrapped & stored in the freezer or refrigerator.
  • Step #11 Because of the risk of salmonella in the raw yolk, butter must be cooked in a heated recipe & not used as a cold spread.
