Ingredients
9 oz French bread, toasted & cut into 1-inch cubes
2 (8-oz) bottles clam juice
1/4 tsp saffron threads
2 1/4 lbs large shrimp, peeled & deveined
1 c dry white wine
1 tsp grated orange rind
1 tbsp olive oil
2 c sliced fennel bulb (about 1 bulb)
1/8 tsp ground red pepper
3 garlic cloves, minced
1/4 tsp black pepper
1 (14.5-oz) can sliced tomatoes, undrained
1/2 tsp garlic powder
1/4 tsp salt
Directions
Step #1 Combine first 5 ingredients in a bowl; toss carefully to coat.
Step #2 Heat oil In a large-ish skillet over medium-high heat.
Step #3 Add shrimp mixture; sauté 3 mins or until shrimp are done.
Step #4 Remove shrimp from pan; set aside.
Step #5 Add fennel & minced garlic to pan; sauté 3 mins or until tender.
Step #6 Add wine & next 4 ingredients (wine through tomatoes).
Step #7 Bring to a boil; reduce heat, & let simmer 5 mins.
Step #8 Place mixture in a mixer; process until smooth.
Step #9 Pour into a fondue pot; keep warm over medium flame.
Step #10 Serve with shrimp & bread.
