Shrimp Bouillabaisse Fondue Recipe

Ingredients
  • 9 oz French bread, toasted & cut into 1-inch cubes
  • 2 (8-oz) bottles clam juice
  • 1/4 tsp saffron threads
  • 2 1/4 lbs large shrimp, peeled & deveined
  • 1 c dry white wine
  • 1 tsp grated orange rind
  • 1 tbsp olive oil
  • 2 c sliced fennel bulb (about 1 bulb)
  • 1/8 tsp ground red pepper
  • 3 garlic cloves, minced
  • 1/4 tsp black pepper
  • 1 (14.5-oz) can sliced tomatoes, undrained
  • 1/2 tsp garlic powder
  • 1/4 tsp salt

Directions
  • Step #1 Combine first 5 ingredients in a bowl; toss carefully to coat.
  • Step #2 Heat oil In a large-ish skillet over medium-high heat.
  • Step #3 Add shrimp mixture; sauté 3 mins or until shrimp are done.
  • Step #4 Remove shrimp from pan; set aside.
  • Step #5 Add fennel & minced garlic to pan; sauté 3 mins or until tender.
  • Step #6 Add wine & next 4 ingredients (wine through tomatoes).
  • Step #7 Bring to a boil; reduce heat, & let simmer 5 mins.
  • Step #8 Place mixture in a mixer; process until smooth.
  • Step #9 Pour into a fondue pot; keep warm over medium flame.
  • Step #10 Serve with shrimp & bread.
