Ingredients
1/2 c crushed round buttery crackers
Tartar Sauce
1/4 c butter or margarine, divided
1/4 tsp freshly ground pepper
2 tbsps all-purpose flour
2 large eggs, lightly beaten
4 green onions, minced
1 pint shucked fresh clams*
2 tbsps lemon juice
1 c crushed unsalted crackers
Directions
Step #1 Drain clams, reserving 2 tbsps juice.
Step #2 Chop clams, & set aside.
Step #3 Stir together clams, unsalted crackers, reserved clam juice, & next 6 ingredients; shape into 12 patties.
Step #4 Melt 2 tbsps butter in large skillet over medium-high heat; add 6 patties, & cook 3 to 4 mins on each side or until golden.
Step #5 Repeat with remaining butter & patties.
Step #6 Serve as soon as possible with Tartar Sauce.
Step #7 .
Step #8 *2 (5-oz) cans minced clams may be substituted for 1 pint shucked fresh clams.
Step #9 Drain clams, reserving 2 tbsps juice.
