Clam Cakes Recipe

Ingredients
  • 1/2 c crushed round buttery crackers
  •  Tartar Sauce
  • 1/4 c butter or margarine, divided
  • 1/4 tsp freshly ground pepper
  • 2 tbsps all-purpose flour
  • 2 large eggs, lightly beaten
  • 4 green onions, minced
  • 1 pint shucked fresh clams*
  • 2 tbsps lemon juice
  • 1 c crushed unsalted crackers

Directions
  • Step #1 Drain clams, reserving 2 tbsps juice.
  • Step #2 Chop clams, & set aside.
  • Step #3 Stir together clams, unsalted crackers, reserved clam juice, & next 6 ingredients; shape into 12 patties.
  • Step #4 Melt 2 tbsps butter in large skillet over medium-high heat; add 6 patties, & cook 3 to 4 mins on each side or until golden.
  • Step #5 Repeat with remaining butter & patties.
  • Step #6 Serve as soon as possible with Tartar Sauce.
  • Step #7 .
  • Step #8 *2 (5-oz) cans minced clams may be substituted for 1 pint shucked fresh clams.
  • Step #9 Drain clams, reserving 2 tbsps juice.
