Chicken Shawarma Recipe

Ingredients
  • 1/2 c sliced onion
  • 8 skinless, boneless chicken thighs
  • 8 pita bread rounds
  • 1/4 tsp freshly ground cardamom
  • 1/2 c tahini
  •  
  • 1 tbsp vegetable oil
  • salt & pepper to taste
  •  
  • 2 tbsps lemon juice
  • 1 tsp mixed spice
  • 1/4 c plain yogurt
  • 1/2 c malt vinegar
  • 1/4 c plain yogurt
  • 1 tbsp sliced fresh parsley
  • 4 c shredded lettuce
  • salt & pepper to taste
  • 4 medium tomatoes, thinly sliced
  • 1 tbsp olive oil
  • 1/2 tsp minced garlic

Directions
  • Step #1 In a glass baking dish, cardamom, mix together the malt vinegar, mixed spice, 1/4 c yogurt, vegetable oil, salt & pepper.
  • Step #2 Place the chicken thighs into the mixture & turn to coat.
  • Step #3 Cover & marinate in the refrigerator for at least 4 hrs or overnight.
  • Step #4 Preheat the oven to 350 degrees F (175 degrees C).
  • Step #5 In a small bowl, mix together the tahini, 1/4 c yogurt, lemon juice, garlic, olive oil, & parsley.
  • Step #6 Spice up with salt & pepper, taste, & adjust flavors if desired.
  • Step #7 Cover & put in the fridge.
  • Step #8 Cover the chicken & bake in the marinade for 30 mins, turning once.
  • Step #9 Uncover, & cook for an extra 5 to 10 mins, or until chicken is browned & cooked through.
  • Step #10 Remove from the dish, & cut into slices.
  • Step #11 Place sliced chicken, tomato, onion, & lettuce onto pita breads.
  • Step #12 Roll up, & top this with the tahini sauce.
