Green Onion Pancakes With Tomato-avocado Salsa Recipe

Ingredients
  •  Cooking spray
  • 1 1/2 c all-purpose flour
  • 1 1/2 c low-fat buttermilk
  • 6 tbsps (1 1/2 oz) shredded sharp provolone
  • 1 c sliced green onions
  • 2 tbsps red wine vinegar
  • 1 tsp baking soda
  • 1 2/3 c sliced seeded plum tomato
  • 1/8 tsp freshly ground black pepper
  •  Salsa:
  • 1/2 c sliced peeled avocado
  • 1/2 c finely sliced red onion
  • 1/2 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 1/8 tsp salt
  • 1 tsp minced fresh oregano
  • 2 tbsps finely sliced seeded jalapeño pepper
  •  Dash of sugar
  •  Pancakes:
  • 2 tsps sugar
  • 1 tsp baking powder
  • 1 large egg, beaten

Directions
  • Step #1 To prepare salsa, mix first 9 ingredients in a bowl.
  • Step #2 Cover up & chill in the fridge.
  • Step #3 To prepare pancakes, lightly spoon flour into dry measuring c; level with a knife.
  • Step #4 Combine flour & next 5 ingredients (flour through black pepper) In a large-ish bowl; make a well in center of mixture.
  • Step #5 Combine buttermilk & egg in a bowl; add to flour mixture.
  • Step #6 Stir just until moist.
  • Step #7 Let stand 10 mins.
  • Step #8 Fold in green onions & provolone cheese.
  • Step #9 Spoon about 1/4 c batter onto a hot nonstick griddle or nonstick skillet coated with cooking spray.
  • Step #10 Turn pancakes when tops are covered with bubbles & edges look cooked (about 3 mins).
  • Step #11 Serve salsa over warm pancakes.
