Seared Beef Tenderloin Mini Sandwiches With Mustard-horseradish Sauce Recipe

Ingredients
  • 1 (8-oz) French bread baguette, cut diagonally into 16 slices
  • 2 tbsps prepared horseradish
  • 2/3 c fat-free sour cream
  • 1 (1 1/2-lb) beef tenderloin, trimmed
  • 1/2 tsp freshly ground black pepper
  • 1/4 c Dijon mustard
  • 1/2 c (2 oz) shaved fresh Parmesan cheese
  •  Cooking spray
  • 2 tbsps capers
  • 3 c trimmed watercress (about 1 bunch)
  • 2 tbsps fresh lemon juice
  • 2 tbsps minced fresh tarragon

Directions
  • Step #1 Combine first 4 ingredients, stirring well with a whisk.
  • Step #2 Cover up & chill in the fridge.
  • Step #3 Secure beef at 2-inch intervals with twine.
  • Step #4 Sprinkle top beef with pepper.
  • Step #5 Heat a large nonstick skillet over medium-high heat; coat pan with cooking spray.
  • Step #6 Add beef to pan; cook 15 mins or until desired degree of doneness, turning frequently.
  • Step #7 Let stand 15 mins.
  • Step #8 Cut into 16 slices.
  • Step #9 Sprinkle top with lemon juice.
  • Step #10 Arrange watercress evenly on bread slices.
  • Step #11 Place 1 beef slice & about 1 tbsp chilled sauce over each bread slice.
  • Step #12 Arrange capers & cheese evenly over sauce.
