Ingredients
  • 1/2 tsp Old Bay seasoning
  • 1/2 c fine, dry breadcrumbs
  • 2 to 3 serrano chile peppers, finely sliced
  • 1 tsp sliced garlic
  • 1/2 tsp freshly ground pepper
  • 3 tbsps mayonnaise
  • 1 large egg
  • 1 tsp hot sauce
  • 1 lb fresh claw crabmeat
  • 2 tbsps sliced cilantro
  • 1 tsp black soy sauce*
  •  Vegetable oil
  • 1 tsp finely sliced fresh ginger

Directions
  • Step #1 Whisk together first 10 ingredients.
  • Step #2 Drain & flake crabmeat, removing any bits of shell.
  • Step #3 Place In a large-ish bowl.
  • Step #4 Pour egg mixture over crabmeat; toss carefully.
  • Step #5 Add breadcrumbs; stir carefully.
  • Step #6 Shape into 1 1/2-inch patties.
  • Step #7 Pour oil to depth of 1 1/2 inches In a large-ish skillet, & heat to 375°.
  • Step #8 Add crab cakes; fry about 2 mins on each side or until golden.
  • Step #9 Remove with a slotted spoon.
  • Step #10 Drain on paper towels.
  • Step #11 *Regular soy sauce may be substituted for black soy sauce.
