Ingredients
1/2 tsp Old Bay seasoning
1/2 c fine, dry breadcrumbs
2 to 3 serrano chile peppers, finely sliced
1 tsp sliced garlic
1/2 tsp freshly ground pepper
3 tbsps mayonnaise
1 large egg
1 tsp hot sauce
1 lb fresh claw crabmeat
2 tbsps sliced cilantro
1 tsp black soy sauce*
Vegetable oil
1 tsp finely sliced fresh ginger
Directions
Step #1 Whisk together first 10 ingredients.
Step #2 Drain & flake crabmeat, removing any bits of shell.
Step #3 Place In a large-ish bowl.
Step #4 Pour egg mixture over crabmeat; toss carefully.
Step #5 Add breadcrumbs; stir carefully.
Step #6 Shape into 1 1/2-inch patties.
Step #7 Pour oil to depth of 1 1/2 inches In a large-ish skillet, & heat to 375°.
Step #8 Add crab cakes; fry about 2 mins on each side or until golden.
Step #9 Remove with a slotted spoon.
Step #10 Drain on paper towels.
Step #11 *Regular soy sauce may be substituted for black soy sauce.
