Pickled Shrimp Recipe

Ingredients
  • 1/2 c vertically sliced onion
  • 1 tsp ground cumin
  • 2 tbsps sliced jalapeño pepper
  • 3/4 c julienne-cut red bell pepper
  • 2 bay leaves
  • 1/4 tsp crushed red pepper
  • 1 tbsp olive oil
  • 1 tbsp sugar
  • 2/3 c cider vinegar
  • 2 tbsps sliced fresh cilantro
  • 1 1/2 lbs jumbo shrimp, peeled & deveined
  • 1/3 c julienne-cut carrot
  • 3/4 tsp salt

Directions
  • Step #1 Heat 1 1/2 tsps oil In a large-ish nonstick skillet over medium-high heat.
  • Step #2 Add half of shrimp; saute 3 mins or until done.
  • Step #3 Place shrimp In a large-ish bowl.
  • Step #4 Repeat procedure with remaining oil & shrimp.
  • Step #5 Combine bell pepper & next 10 ingredients (bell pepper through bay leaves) in a medium saucepan over medium-high heat; bring to a boil.
  • Step #6 Cover up, reduce heat, & let simmer 8 mins or until tender.
  • Step #7 Pour pepper mixture over shrimp; add the cilantro, stirring to mix.
  • Step #8 Cover up & chill 8 hrs or up to 2 days, stirring every once in awhile.
  • Step #9 Discard the bay leaves.
