Classic Cherries Jubilee Recipe

Ingredients
  • 2 tbsps cornstarch
  • 3 c vanilla ice cream
  • 1/4 c water
  • 1/4 c orange juice
  • 1 lb Bing or other dark, sweet cherries, rinsed & pitted (or use frozen pitted cherries)
  • 1/4 c brandy
  • 1/2 tsp finely grated orange zest
  • 1/4 tsp cherry extract
  • 1/2 c white sugar

Directions
  • Step #1 Whisk together the sugar & cornstarch in a wide saucepan.
  • Step #2 Stir in the water & orange juice; bring to a boil over medium-high heat, whisking until thickened.
  • Step #3 Stir in the cherries & orange zest, return to a boil, then reduce heat, & let simmer for 10 mins.
  • Step #4 While the cherries are cooking, spoon the ice cream into serving bowls.
  • Step #5 Remove the cherries from the heat, & stir in the the cherry extract.
  • Step #6 Pour in the brandy, & ignite with a long lighter.
  • Step #7 Gently shake the pan until the blue flame has extinguished itself.
  • Step #8 Spoon the cherries over the bowls of ice cream.
