Broiled Sardines With Mustard-shallot Crumbs Recipe

Ingredients
  •  Four 4- to 4 1/2-oz cans of large sardines in olive oil-drained, halved lengthwise & boned
  • 1 1/2 tbsps unsalted butter, softened
  • 2 tbsps sliced parsley
  •  Salt
  • 2 1/2 tbsps whole-grain mustard
  • 1 small shallot, thinly sliced, slices separated into rings
  • 1/2 c heavy cream
  • 1/3 c fine dry bread crumbs
  • 1/4 tsp crushed red pepper

Directions
  • Step #1 Preheat the broiler.
  • Step #2 In a medium bowl, the parsley, mix the bread crumbs with 1 1/2 tbsps of the mustard, butter, shallot & crushed red pepper.
  • Step #3 Spice up lightly with salt.
  • Step #4 In a medium, shallow baking dish, whisk the heavy cream with the remaining 1 tbsp of mustard.
  • Step #5 Arrange the sardines in the baking dish, skin side down.
  • Step #6 Scatter the bread-crumb mixture on top.
  • Step #7 Broil the sardines 6 inches from the heat for 1 min & 30 seconds, or until heated through & golden brown.
  • Step #8 Serve at once.
