Smoky Three-bean Salsa Recipe

Ingredients
  • 1/4 tsp salt
  • 1 small sweet onion, finely sliced (about 1/2 c)
  • 1/4 c fresh lime juice
  • 1 chipotle pepper in adobo sauce, minced*
  • 2 small garlic cloves, minced
  • 1 green bell pepper, finely sliced
  • 1 (15-oz) can black beans, rinsed & drained
  • 1 (14 1/2-oz) can sliced tomatoes, undrained
  • 1 (16-oz) can navy beans, rinsed & drained
  • 1 (15.8-oz) can black-eyed peas, rinsed & drained
  • 1/2 c sliced fresh cilantro

Directions
  • Step #1 Combine all ingredients In a large-ish bowl; cover & chill at least 2 hrs.
  • Step #2 *Chipotle peppers in adobo sauce may be found in the Mexican sections of supermarkets or at Mexican grocery stores; 1 small jalapeno pepper, seeded & minced, may be substituted.
