Garlicky Red Lentil Dal Recipe

Ingredients
  • 1/2 tsp ground red pepper
  • 1/2 tsp Hungarian sweet paprika
  • 4 tsps olive oil, divided
  • 1 tsp sliced fresh mint
  • 1 bay leaf
  • 1/4 tsp freshly ground black pepper
  • 1/4 c sliced onion
  • 1/2 c sliced seeded tomato
  • 1 1/2 tsps cumin seeds, divided
  • 2 1/2 c water
  • 1 tsp salt
  • 2 tbsps fresh lemon juice
  • 1 c dried small red lentils
  • 1/2 tsp ground turmeric
  • 1 garlic clove, sliced

Directions
  • Step #1 Combine first 3 ingredients in a medium saucepan; bring to a boil.
  • Step #2 Cover up, reduce heat, & let simmer 10 mins or until tender.
  • Step #3 Drain; discard bay leaf.
  • Step #4 Place lentils in a small bowl.
  • Step #5 Combine 1 tsp cumin seeds, paprika, salt, turmeric, & red pepper in a spice or coffee grinder; process until finely ground.
  • Step #6 Heat 1 tbsp oil in a medium nonstick skillet over medium-high heat.
  • Step #7 Add onion; sauté 2 mins or until tender.
  • Step #8 Stir in spice mixture, tomato, & garlic; cook 2 mins or until slightly thick.
  • Step #9 Remove pan from heat; stir in the lentils, lemon juice, & black pepper.
  • Step #10 Place lentil mixture in a food processor/blender; process until smooth.
  • Step #11 Heat 1 tsp olive oil in a small sauté pan over med-heat/flame, & add 1/2 tsp cumin seeds.
  • Step #12 Sauté seeds for 15 seconds, & drizzle over dal.
  • Step #13 Sprinkle top with fresh mint.
