Grouper Fingers Recipe

Ingredients
  • 1/2 tsp salt
  •  Tropical Tartar Sauce
  • 1 1/4 lbs grouper fillets (or any firm white fish)
  • 3 large eggs, lightly beaten
  • 1/2 c all-purpose flour
  • 1/4 tsp pepper
  • 1 1/2 c saltine cracker crumbs (about 30 saltine crackers)

Directions
  • Step #1 Cut fish into 3-by-1/2-inch strips.
  • Step #2 Combine flour, salt, & pepper.
  • Step #3 Dredge fish in flour mixture, shaking off excess.
  • Step #4 Dip in egg, & roll in cracker crumbs, shaking off excess crumbs.
  • Step #5 Place on a baking sheet.
  • Step #6 Cover up & chill at least 1 hr.
  • Step #7 Pour oil to depth of 2 inches into a Dutch oven.
  • Step #8 Heat to 375°.
  • Step #9 Fry fish fingers in hot oil 2 mins or until golden.
  • Step #10 Drain on paper towels.
  • Step #11 Serve as soon as possible with Tropical Tartar Sauce.
