Spinach With Chickpeas And Spices Recipe

Ingredients
  • 4 garlic cloves, minced
  • 1 tbsp sliced fresh parsley
  • 1/4 tsp crushed red pepper
  • 1 tbsp fresh lemon juice
  • 1 1/2 c water
  • 1/4 tsp saffron threads, crushed
  • 2 (10-oz) packages fresh spinach
  • 3/4 tsp salt
  • 3/4 tsp ground cumin
  • 1 1/2 c sliced onion
  • 2 (15 1/2-oz) cans chickpeas (garbanzo beans), drained
  • 1/4 c dry breadcrumbs
  • 1/2 tsp freshly ground black pepper
  • 2 tbsps dry sherry
  • 1 tbsp olive oil

Directions
  • Step #1 Heat olive oil in a Dutch oven over medium-high heat.
  • Step #2 Add onion; sauté 2 mins.
  • Step #3 Add red pepper & garlic, & sauté 1 min.
  • Step #4 Add cumin; cook 30 seconds, stirring constantly.
  • Step #5 Add water, saffron, sherry, breadcrumbs, & chickpeas; cook 2 mins or until slightly thick, stirring frequently.
  • Step #6 Add half of spinach; cook 2 mins or until spinach wilts.
  • Step #7 Repeat procedure with remaining spinach.
  • Step #8 Remove from heat.
  • Step #9 Stir in parsley & remaining ingredients.
