Green Pea Hummus Recipe

Ingredients
  • 1 garlic clove, sliced
  • 1/4 tsp ground sumac
  • 3/4 tsp ground cumin
  • 1/2 tsp salt
  • 2 tbsps fresh lemon juice
  • 2 c frozen green peas
  • 1 tsp extravirgin olive oil
  • 3 tbsps tahini (sesame-seed paste)
  • 1/2 c sliced fresh flat-leaf parsley

Directions
  • Step #1 Cook peas in boiling water 3 mins; drain & rinse with cold water.
  • Step #2 Drain.
  • Step #3 Place peas & next 6 ingredients (through garlic) in a food processor/blender, & process until smooth.
  • Step #4 Spoon pea mixture into a small serving bowl; chill in the fridge.
  • Step #5 Drizzle with oil, & sprinkle with sumac just before serving.
