Smoked Salmon Canapés Recipe

Ingredients
  • 1/2 tsp freshly ground pepper
  •  Garnish: fresh dill, separated into tiny sprigs
  •  Freshly ground pepper
  • 1 tbsp honey
  • 12 oz smoked salmon
  • 1/4 c sour cream
  • 1/2 (8-oz) package cream cheese, softened
  • 48 very thin slices cucumber
  •  Minced purple onion
  • 1/4 tsp salt
  • 24 slices party rye or pumpernickel bread

Directions
  • Step #1 Combine first 5 ingredients in a bowl; beat at lowish speed of an electric mixer until thoroughly mixed.
  • Step #2 Cut each bread slice diagonally in half.
  • Step #3 Separate salmon into very thin slices (smoked salmon should separate naturally into slivers).
  • Step #4 Cut salmon into 48 pieces.
  • Step #5 Spread 1/2 tsp cream cheese mixture onto each piece of bread.
  • Step #6 Roll a cucumber slice inside each salmon piece; place over cream cheese spread on bread.
  • Step #7 Dollop 1/2 tsp cream cheese mixture over salmon.
  • Step #8 Sprinkle top with onion & pepper; garnish, if desired.
