Scallop Seviche Recipe

Ingredients
  • 1 tbsp sliced fresh cilantro
  • 1/4 c fresh orange juice
  • 1 c fresh lime juice (about 4 limes)
  • 1/2 tsp salt
  • 3/4 c sliced onion
  • 1 serrano pepper, thinly sliced
  • 1 lb sea scallops

Directions
  • Step #1 Cut each scallop horizontally into 3 even slices.
  • Step #2 Place scallops in a nonaluminum dish.
  • Step #3 Add lime juice & the remaining ingredients; toss to coat (juice mixture should cover scallops).
  • Step #4 Cover up & put in the fridge for at least 6 hrs or overnight, stirring mixture every once in awhile.
  • Step #5 Serve the scallops cold using a slotted spoon.
