Grilled Wild Salmon With Roasted Beets And Arugula Recipe

Ingredients
  • 4 c arugula leaves
  • 18 baby yellow beets
  • 1 lb wild Pacific salmon
  •  Freshly ground black pepper
  •  Balsamic Reduction
  •  Salt
  • 18 baby red beets
  •  Olive oil

Directions
  • Step #1 Scrub beets thoroughly; remove greens & save for another use.
  • Step #2 Drizzle lightly with olive oil, & place this in a roasting pan.
  • Step #3 Bake, covered with foil wrap, at 400° for 30 mins or until tender.
  • Step #4 Rub the skins off beets with a towel, & slice.
  • Step #5 Remove any bones from the salmon.
  • Step #6 Brush with olive oil, & season lightly with salt & pepper.
  • Step #7 Grill salmon over medium-hot coals on both sides until medium rare (translucent in the center).
  • Step #8 Drizzle plates with Balsamic Reduction.
  • Step #9 Top with beet slices & arugula.
  • Step #10 Cut salmon into serving pieces, & place on plates.
