Savory Cocktail Tree Recipe

Ingredients
  • 3 c (12 oz) finely shredded sharp Cheddar cheese
  • 1 (4-oz) jar sliced pimiento, drained well
  • 1 tbsp butter or margarine, melted
  • 1 clove garlic, minced
  •  Coatings: sliced fresh parsley, finely sliced toasted pecans
  •  Chopped fresh parsley
  • 1 large sweet red pepper, cut in half lengthwise
  • 2 (7-oz) jars large pimiento-stuffed olives, drained
  • 2 (8-oz) tubs cream cheese, softened
  • 1 (8-oz) package cream cheese
  • 1 (12") Styrofoam cone
  • 1 (10-oz) package baked bite-size whole wheat snack crackers
  • 1/4 c dry white wine
  • 1 (3-oz) package cream cheese
  • 1 small onion, minced

Directions
  • Step #1 Cook onion & garlic in butter in a medium skillet over medium-high heat, stirring constantly, until tender.
  • Step #2 Add wine.
  • Step #3 Bring to a boil; reduce heat, uncovered, & let simmer, until liquid has evaporated.
  • Step #4 Set aside.
  • Step #5 Position knife blade in food processor/blender bowl; add shredded Cheddar cheese & 2 packages (11 oz) cream cheese.
  • Step #6 Process until cheeses form a ball, stopping once to scrape down sides.
  • Step #7 Remove mixture to a medium bowl.
  • Step #8 Stir in onion mixture & pimiento.
  • Step #9 Cover up & chill at least 30 mins.
  • Step #10 Shape mixture into 3/4" balls.
  • Step #11 Place cheese balls on a wax paper-lined jellyroll pan.
  • Step #12 Cover up & chill at least 8 hrs.
  • Step #13 Roll half of chilled balls in parsley & half in pecans.
  • Step #14 Cover up & chill until firm.
  • Step #15 Wrap plastic wrap around Styrofoam cone, sealing completely.
  • Step #16 Spread softened tub cream cheese over plastic wrap-coated cone, covering cone completely & making a 1/2"-thick layer.
  • Step #17 Sprinkle top coated cone with sliced parsley.
  • Step #18 Press a circular row of crackers into the cream cheese-coated cone at the base.
  • Step #19 Attach a circular row of cheese balls at base of cone just above cracker layer, using wooden picks.
  • Step #20 Attach a circular row of olives above row of cheese balls, using wooden picks.
  • Step #21 Gently press another row of crackers into the cream cheese-coated cone, creating a shingled effect.
  • Step #22 Repeat procedure, working in circular rows & covering cone completely.
  • Step #23 Cut a large star shape out of each pepper half, using a sharp knife.
  • Step #24 Secure with a wooden pick at top of tree.
  • Step #25 Serve remaining cheese balls on crackers around base of tree.
  • Step #26 Note: For bite-size whole wheat snack crackers, we used Wheat Thins.
