Ingredients
2/3 c fresh lemon juice
2 tsps ground cumin
2 garlic cloves, minced
1 1/2 tbsps finely grated lemon rind
48 chicken drumettes (about 4 1/2 lbs) or chicken wings
1/2 tsp freshly ground black pepper
1/2 c coarsely sliced fresh mint, divided
1/2 tsp salt
Cooking spray
1/4 c extra-virgin olive oil
Directions
Step #1 Combine the lemon rind, salt, 1/4 c sliced mint, black pepper, lemon juice, ground cumin, olive oil, & minced garlic In a large-ish bowl.
Step #2 Add the chicken drumettes, & toss to coat.
Step #3 Cover up the drumettes, & marinate in the refrigerator for 20 mins, tossing every once in awhile.
Step #4 Preheat the broiler.
Step #5 Place half the drumettes on a broiler pan coated with cooking spray, & broil for 15 mins or until browned.
Step #6 Turn the drumettes over, & broil for 10 mins on the other side or until the drumettes are done.
Step #7 Repeat the procedure with the remaining drumettes.
Step #8 Sprinkle top drumettes with the remaining 1/4 c sliced mint before serving (either hot or at about room temp).
