Lemon-mint Chicken Wings Recipe

Ingredients
  • 2/3 c fresh lemon juice
  • 2 tsps ground cumin
  • 2 garlic cloves, minced
  • 1 1/2 tbsps finely grated lemon rind
  • 48 chicken drumettes (about 4 1/2 lbs) or chicken wings
  • 1/2 tsp freshly ground black pepper
  • 1/2 c coarsely sliced fresh mint, divided
  • 1/2 tsp salt
  •  Cooking spray
  • 1/4 c extra-virgin olive oil

Directions
  • Step #1 Combine the lemon rind, salt, 1/4 c sliced mint, black pepper, lemon juice, ground cumin, olive oil, & minced garlic In a large-ish bowl.
  • Step #2 Add the chicken drumettes, & toss to coat.
  • Step #3 Cover up the drumettes, & marinate in the refrigerator for 20 mins, tossing every once in awhile.
  • Step #4 Preheat the broiler.
  • Step #5 Place half the drumettes on a broiler pan coated with cooking spray, & broil for 15 mins or until browned.
  • Step #6 Turn the drumettes over, & broil for 10 mins on the other side or until the drumettes are done.
  • Step #7 Repeat the procedure with the remaining drumettes.
  • Step #8 Sprinkle top drumettes with the remaining 1/4 c sliced mint before serving (either hot or at about room temp).
