Corn-and-black-bean Salad Recipe

Ingredients
  • 1/3 c sliced fresh cilantro
  • 1 large orange bell pepper, coarsely sliced
  • 1 tsp paprika
  • 2 small jalapeño peppers, seeded & minced
  • 2 c frozen whole kernel corn, thawed
  • 3/4 tsp salt
  • 2 (15 1/2-oz) cans black beans, rinsed & drained
  • 1/4 c balsamic vinegar
  • 1 1/2 tbsps fresh lime juice
  • 1/2 tsp freshly ground black pepper
  • 1/3 c extra-virgin olive oil

Directions
  • Step #1 Whisk together first 4 ingredients In a large-ish bowl.
  • Step #2 Add beans & remaining ingredients; toss well to coat.
  • Step #3 Cover up & let this stand 1 hr, tossing every once in awhile.
