Picadillo Empanaditas Recipe

Ingredients
  • 3 tbsps finely sliced onion
  • 3 tbsps finely sliced green bell pepper
  • 1/8 tsp salt
  •  Cooking spray
  • 1 tbsp capers, sliced
  • 1 tbsp tomato paste
  • 1 garlic clove, minced
  • 1 (10-oz) can put in the fridged pizza crust
  • 1/4 lb ground round
  • 1/2 tsp bottled habanero sauce or other hot sauce
  • 2 tbsps sliced pimento
  • 3 tbsps raisins, sliced

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Cook beef in a small nonstick skillet over medium-high heat until browned, stirring to crumble.
  • Step #3 Drain well, & return beef to pan.
  • Step #4 Add onion, bell pepper, & garlic, & sauté 5 mins or until tender.
  • Step #5 Remove from heat, & stir in the raisins & next 5 ingredients (raisins through salt).
  • Step #6 Divide the pizza crust dough into 18 portions; cover dough, & let rest 5 mins.
  • Step #7 Shape each dough portion into a ball, & roll each portion into a 3-inch circle on a lightly floured surface.
  • Step #8 Spoon 2 level tsps of beef mixture onto half of each dough circle.
  • Step #9 Moisten edges of dough with water.
  • Step #10 Fold dough over beef filling, & press edges together to seal.
  • Step #11 Place empanaditas on a large baking sheet coated with cooking spray.
  • Step #12 Lightly coat tops of empanaditas with cooking spray.
  • Step #13 Bake at 425° for 10 mins or until lightly browned.
