Roasted Tomatillo-mango Salsa With Spiced Tortilla Chips Recipe

Ingredients
  • 1/2 c fresh cilantro leaves
  • 1 tsp salt
  • 10 (6-inch) flour tortillas
  •  Salsa:
  • 1/4 tsp salt
  • 4 unpeeled garlic cloves
  • 3 c finely sliced peeled mango (about 2 large)
  • 1 tsp ground cumin
  • 1 tbsp chili powder
  •  Chips:
  • 1 large jalapeño pepper
  • 1 1/2 lbs fresh tomatillos
  •  Cooking spray
  • 1 tbsp fresh lime juice
  • 1 large onion, peeled & quartered

Directions
  • Step #1 Preheat oven to 450°.
  • Step #2 To prepare chips, lightly coat tortillas with cooking spray.
  • Step #3 Combine the chili powder, cumin, & 1/4 tsp salt in a small bowl; sprinkle evenly over tortillas.
  • Step #4 Cut each tortilla into 4 wedges.
  • Step #5 Arrange wedges in a single layer on a baking sheet.
  • Step #6 Bake at 450° for 7 mins or until crisp & golden.
  • Step #7 Preheat broiler.
  • Step #8 To prepare salsa, discard the husks & stems from tomatillos.
  • Step #9 Remove stem from jalapeño.
  • Step #10 Place tomatillos, onion, jalapeño, & garlic on a broiler pan coated with cooking spray.
  • Step #11 Broil 8 mins or until the tomatillos & onions are lightly charred (about 8 mins), turning once; cool.
  • Step #12 Peel garlic.
  • Step #13 Place garlic, lime juice, tomatillos, jalapeño, onion, cilantro, & 1 tsp salt in a food processor/blender; pulse 10 times or until ingredients are coarsely sliced.
  • Step #14 Place tomatillo mixture In a large-ish bowl; stir in the mango.
  • Step #15 Serve with chips.
