Shrimp With Peppers Recipe

Ingredients
  • 1/2 tsp salt
  • 1 1/2 lbs large shrimp, peeled & deveined
  • 1 tbsp water
  • 1 tbsp fresh lime juice
  • 1/2 tsp hoisin sauce
  • 2/3 c fresh orange juice (2 oranges)
  • 2 1/2 c red bell pepper strips
  • 2 tbsps jalapeño jelly
  • 1 tsp cornstarch
  • 3 tbsps sliced fresh basil
  • 1/8 tsp freshly ground black pepper
  • 1 c vertically sliced Walla Walla or other sweet onion
  • 1 tbsp olive oil

Directions
  • Step #1 Heat oil In a large-ish nonstick skillet over medium-high heat.
  • Step #2 Add shrimp; sauté 3 mins or until shrimp are done.
  • Step #3 Remove shrimp from pan with a slotted spoon; keep warm.
  • Step #4 Add bell pepper & onion to pan, & sauté for 2 mins over medium-high heat.
  • Step #5 Add the orange juice; reduce heat, & let simmer 3 mins.
  • Step #6 Combine water & cornstarch in a small bowl.
  • Step #7 Add cornstarch mixture, jelly, basil, & lime juice to pan; bring to a boil.
  • Step #8 Cook 4 mins, stirring every once in awhile.
  • Step #9 Add hoisin sauce; cook 1 min.
  • Step #10 Stir in shrimp, salt, & black pepper.
