Speedy Black Beans And Mexican Rice Recipe

Ingredients
  • 2 tbsps sliced fresh cilantro
  • 1 (8.8-oz.) pouch ready-to-serve Mexican rice
  • 1 (4.4-oz.) can sliced green chiles
  •  Toppings: sour cream, salsa, sliced tomato, shredded Cheddar cheese
  • 1 (15-oz.) can black beans, rinsed & drained

Directions
  • Step #1 Cook rice according to package directions.
  • Step #2 Combine black beans & green chiles in a microwave-safe bowl.
  • Step #3 Microwave at HIGH 90 seconds.
  • Step #4 Stir in rice & cilantro.
  • Step #5 Serve as soon as possible with desired toppings.
  • Step #6 Note: For testing purposes only, we used Rice-A-Roni Express Heat & Serve Mexican Rice.
  • Step #7 Mexican Beef 'n' Rice: Substitute 1 lb.
  • Step #8 cooked lean ground beef for black beans.
  • Step #9 Substitute 1 c salsa for green chiles.
  • Step #10 Prepare recipe as directed omitting toppings.
  • Step #11 Serve with corn chips or in lettuce leaves, if desired.
  • Step #12 Makes 4 servings.
