Curried Artichoke Dip Recipe

Ingredients
  • 1/2 c 1% low-fat cottage cheese
  • 1 (14-oz) can artichoke hearts, drained
  • 2 tsps lemon juice
  • 1 tbsp sliced green onions
  • 1/4 c low-fat sour cream
  • 1/2 tsp curry powder
  • 1 tbsp sliced fresh parsley

Directions
  • Step #1 Place first 4 ingredients in a food processor/blender; process until smooth.
  • Step #2 Add remaining ingredients; pulse 10 times or until coarsely sliced.
  • Step #3 Serve with breadsticks, unsalted crackers, or raw vegetables.
