Cranberry Crackers Recipe

Ingredients
  • 1 1/2 tsps orange juice
  • 1 1/2 tbsps minced fresh cilantro
  • 1 c finely sliced fresh cranberries
  • 1 1/2 tsps grated fresh ginger
  • 2 tbsps finely sliced walnuts
  • 2 green onions, thinly sliced
  • 2 tbsps sugar
  • 1 tsp seeded & minced jalapeño pepper
  • 16 wheat crackers or light shredded whole wheat wafers
  • 4 oz reduced-fat cream cheese, softened

Directions
  • Step #1 Stir together first 6 ingredients; chill 2 to 3 hrs.
  • Step #2 Stir together cream cheese & orange juice; stir in the walnuts.
  • Step #3 Spread on crackers, & top this with cranberry mixture.
  • Step #4 Serve as soon as possible.
  • Step #5 NOTE: For testing purposes only, we used Snackwells Wheat Crackers.
