Faidley's Crab Cakes Recipe

Ingredients
  •  Tartar sauce (optional)
  • 1 quart vegetable oil
  • 1 tbsp Dijon mustard
  • 1/2 c mayonnaise
  • 1 large egg, lightly beaten
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp hot sauce
  • 1 c crushed saltines (about 20 crackers)
  • 1 lb fresh lump crabmeat, drained

Directions
  • Step #1 Stir together first 5 ingredients; fold in crabmeat & saltines.
  • Step #2 Let stand 3 mins.
  • Step #3 Shape mixture into 8 patties.
  • Step #4 Place on a wax paper-lined baking sheet; cover & chill 1 hr.
  • Step #5 Fry crab cakes, in batches, in hot oil In a large-ish skillet over medium-high heat 3 to 4 mins on each side or until golden.
  • Step #6 Drain on paper towels.
  • Step #7 Serve with tartar sauce, if desired.
  • Step #8 Note: To sauté crab cakes, cook in 3 tbsps butter or oil In a large-ish nonstick skillet 3 to 4 mins on each side or until golden.
