Baby Artichokes With Creamy Horseradish-dill Dip Recipe

Ingredients
  • 1 1/2 tsps sliced fresh dill
  • 1 1/2 tsps fresh lemon juice
  • 1 tbsp fresh lemon juice
  • 1/8 tsp freshly ground black pepper
  • 1/4 c plain fat-free yogurt
  • 2 1/2 lbs baby artichokes (about 10 artichokes)
  • 4 c cold water
  • 1/4 c (2 oz) 1/3-less-fat cream cheese, softened
  • 1 tbsp prepared horseradish
  • 1 lemon, halved
  •  Fresh dill sprigs (optional)
  • 1/8 tsp salt

Directions
  • Step #1 Combine water & 1 tbsp lemon juice.
  • Step #2 Working with one artichoke at a time, snapping at base, bend back outer green leaves of artichokes, until reaching light green leaves.
  • Step #3 Trim about 1 inch from top of artichoke.
  • Step #4 Cut off stem of artichoke to within 1 inch of base; peel stem.
  • Step #5 Cut artichoke in half vertically.
  • Step #6 Rub edges with cut lemon, & place artichoke halves in lemon water.
  • Step #7 Repeat with remaining artichokes.
  • Step #8 Steam artichoke halves for 12 mins or until tender.
  • Step #9 Combine yogurt & next 6 ingredients (through pepper).
  • Step #10 Serve artichoke halves with dip; garnish with dill sprigs, if desired.
