Avocado Crab Dip
Ingredients
3 large egg whites
3/4 c lump crabmeat, shell pieces removed
1 tbsp sliced fresh cilantro
1/4 c sliced green onions
1 c dry breadcrumbs
3 tbsps plain fat-free yogurt
1 tsp salt
Stuffed jalapeños:
2 tbsps minced red bell pepper
2 tbsps fresh lime juice
1/4 c vegetable broth
1 tsp garlic powder
1 garlic clove, minced
1/2 c sliced peeled avocado
1/4 c fat-free sour cream
Avocado dunk:
Cooking spray
2 tbsps minced onion
3/4 c yellow cornmeal
1 garlic clove, minced
20 large jalapeño peppers (about 1 lb)
2 tbsps sliced fresh cilantro
1/4 tsp salt
1/4 tsp salt
Directions
Step #1 Preheat broiler.
Step #2 To prepare stuffed jalapeños, place peppers on a foil wrap-lined baking sheet; broil 12 mins or until blackened, turning every once in awhile.
Step #3 Place in a zip-top plastic bag; seal.
Step #4 Let stand 15 mins; peel jalapeños.
Step #5 Cut a lengthwise slit in each, seeds, discarding stems, & membranes.
Step #6 Place a medium nonstick skillet coated with cooking spray over low heat/flame until hot.
Step #7 Add bell pepper, onion, & garlic, & cook 5 mins or until soft.
Step #8 Remove from heat; stir in the crabmeat, 1 tbsp cilantro, & 1/4 tsp salt.
Step #9 Divide crab mixture evenly among jalapeños (each will be very full).
Step #10 Preheat oven to 375°.
Step #11 Beat the egg whites in a medium bowl at high speed of a mixer until soft peaks form.
Step #12 Fold in yogurt.
Step #13 Combine breadcrumbs, cornmeal, 1 tsp salt, & garlic powder in a small bowl.
Step #14 Dip each stuffed jalapeño in the egg white mixture; dredge in the breadcrumb mixture.
Step #15 Place the breaded jalapeños on a baking sheet coated with cooking spray.
Step #16 Lightly spray jalapeños with cooking spray.
Step #17 Bake at 375° for 15 mins or until golden.
Step #18 To prepare avocado dunk, place avocado & remaining ingredients in a food processor/blender or mixer, & process until smooth.
