Ingredients
2 lbs tiny new potatoes
1/4 tsp cayenne pepper
Salt
1 c freshly grated Parmesan cheese (about 3 oz)
2 large eggs, beaten
Directions
Step #1 Preheat the oven to 400° & line a large rimmed baking sheet with foil wrap.
Step #2 Steam the potatoes over boiling water until just tender, 10 to 12 mins.
Step #3 Transfer to a plate to cool slightly.
Step #4 Strain the beaten eggs into a soup plate & season lightly with salt.
Step #5 In another soup plate, mix the Parmesan with the cayenne.
Step #6 Working in small batches, shaking off the excess, coat the potatoes with the beaten egg, then toss them in the Parmesan mixture.
Step #7 Set the potatoes on the baking sheet & roast for about 25 mins, or until golden.
Step #8 Serve hot or at about room temp.
Step #9 Make Ahead: The potatoes can be kept at about room temp for 3 hrs.
