Marinated Spanish Olives Recipe

Ingredients
  •  Fresh rosemary sprigs (optional)
  • 1 tbsp extra-virgin olive oil
  • 1/2 tsp crushed red pepper
  • 24 large unpitted Spanish olives
  • 2 tsps coriander seeds, crushed
  • 1 tsp dried thyme
  • 2 garlic cloves, thinly sliced
  • 2 tbsps sherry vinegar
  • 1 tsp dried rosemary, crushed

Directions
  • Step #1 Combine first 8 ingredients in a bowl.
  • Step #2 Cover up & marinate in refrigerator at least 8 hrs.
  • Step #3 Serve at about room temp.
  • Step #4 Garnish with rosemary sprigs, if desired.
