Colorful Vegetable Medley With Chive Aioli Recipe

Ingredients
  • 1/4 tsp salt
  • 4 garlic cloves, peeled
  • 2 tsps olive oil
  • 1/2 c low-fat sour cream
  • 1 1/2 c (3/4-inch) diagonally sliced carrot
  •  Vegetables:
  • 3 1/2 c broccoli florets (about 10 oz)
  •  Aioli:
  • 1/4 tsp salt
  • 1/4 c fat-free mayonnaise
  • 2 tbsps fresh lemon juice
  • 3 tbsps sliced fresh chives
  • 4 beets (about 2 lbs)
  • 2 tbsps water

Directions
  • Step #1 To prepare vegetables, trim off beet roots; peel beets.
  • Step #2 Cut each beet into 6 wedges.
  • Step #3 Place beet wedges in an 11 x 7-inch baking dish.
  • Step #4 Cover up & microwave at HIGH for 5 mins; cool slightly.
  • Step #5 Add broccoli florets & carrot slices; sprinkle with water & 1/4 tsp salt.
  • Step #6 Cover up & microwave at HIGH for 10 mins or until tender.
  • Step #7 Remove the vegetables with a slotted spoon, & place this in a shallow serving dish.
  • Step #8 To prepare the aioli, place sour cream & the next 5 ingredients (sour cream through garlic cloves) in a mixer or food processor/blender; process until smooth, scraping sides of bowl once.
  • Step #9 Place garlic mixture in a small bowl; stir in the chives.
  • Step #10 Serve with vegetables.
