Garlic Flatbreads With Smoked Mozzarella And Tomato Vinaigrette Recipe

Ingredients
  • 1 package dry yeast (about 2 1/4 tsps)
  • 1/4 c whole wheat flour (about 1 oz)
  • 1 garlic clove, minced
  •  Cooking spray
  • 1/4 tsp salt
  • 1/2 c thinly sliced fresh basil
  • 4 garlic cloves, thinly sliced
  • 1 c (4 oz) shredded smoked mozzarella cheese
  • 1 tsp cornmeal
  •  Flatbreads:
  • 2 tbsps extravirgin olive oil
  • 3/4 c halved yellow cherry tomatoes (about 4 oz)
  •  Topping:
  • 1 c warm water (100° to 110°), divided
  • 1/2 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 3/4 c halved red cherry tomatoes (about 4 oz)
  • 3 tbsps balsamic vinegar
  • 2 1/4 c all-purpose flour, divided (about 10 oz)

Directions
  • Step #1 To prepare flatbreads, lightly spoon whole wheat flour into a dry measuring c; level with a knife.
  • Step #2 Combine whole wheat flour, 1/4 c water, & yeast in a bowl; let this stand 10 mins.
  • Step #3 Lightly spoon all-purpose flour into dry measuring c, & level with a knife.
  • Step #4 Combine 2 c all-purpose flour, 1/2 tsp salt, & remaining 3/4 c water In a large-ish bowl.
  • Step #5 Add yeast mixture, & stir until a dough forms.
  • Step #6 Turn dough out onto a lightly floured surface.
  • Step #7 Knead until smooth & elastic (about 10 mins); add enough of remaining 1/4 c all-purpose flour, 1 tbsp at a time, to prevent dough from sticking to hands (dough will feel sticky).
  • Step #8 Place dough In a large-ish bowl coated with cooking spray, turning to coat top.
  • Step #9 Cover up & let rise in a warm place (85°), free from drafts, 1 hr or until doubled in size.
  • Step #10 (Gently press two fingers into dough.
  • Step #11 If indentation remains, dough has risen enough.
  • Step #12 )Preheat oven to 450°.
  • Step #13 Punch dough down; cover & let rest 5 mins.
  • Step #14 Divide dough in half.
  • Step #15 Roll each half into a 9-inch circle on a lightly floured surface; place on baking sheets sprinkled with cornmeal.
  • Step #16 Lightly coat dough with cooking spray.
  • Step #17 Sprinkle top dough evenly with sliced garlic; press garlic into dough using fingertips.
  • Step #18 Bake at 450° for 10 mins or until crisp & garlic begins to brown.
  • Step #19 Remove flatbreads from oven; cool on wire racks.
  • Step #20 To prepare topping, oil, 1/4 tsp salt, mix vinegar, pepper, & minced garlic in a medium bowl.
  • Step #21 Add tomatoes; toss carefully.
  • Step #22 Preheat broiler.
  • Step #23 Sprinkle top each flatbread with 1/2 c cheese; broil flatbreads 1 min or until cheese melts.
  • Step #24 Remove from oven; top each flatbread with half of tomato mixture.
  • Step #25 Sprinkle top each flatbread with 1/4 c basil.
  • Step #26 Cut each flatbread into 6 equal wedges.
