Peppered Pork With Pecan Biscuits Recipe

Ingredients
  • 3/4 c warm water (100° to 110°)
  • 1 c buttermilk
  • 1 (2-lb.) package pork tenderloins
  • 2 tsps pepper
  • 1/4 c butter, melted
  • 1 (20-oz.) box all-purpose baking mix
  • 1 tbsp sugar
  •  Coarse-grained Dijon mustard
  • 1/2 c sliced pecans
  • 2 tbsps prepared pesto
  • 1 tsp salt
  • 1 (1/4-oz.) envelope rapid-rise yeast
  • 1/2 c all-purpose flour

Directions
  • Step #1 Combine pepper & salt.
  • Step #2 Rub evenly over pork tenderloins, & place on a lightly greased rack in a roasting pan.
  • Step #3 Bake at 450° for 20 to 25 mins or until a meat thermometer inserted into thickest portion registers 155°.
  • Step #4 Let stand 10 mins before thinly slicing.
  • Step #5 Reduce oven temperature to 425°.
  • Step #6 Combine yeast, sugar, & 3/4 c water In a large-ish bowl; let this stand 5 mins.
  • Step #7 Add baking mix & next 4 ingredients to yeast mixture, stirring until dry ingredients are moistened.
  • Step #8 Stir in flour (up to 1/2 c) as needed until dough pulls away from sides of bowl.
  • Step #9 Turn dough out onto a lightly floured surface, & knead carefully 2 to 3 times.
  • Step #10 Pat or roll dough to a 1-inch thickness; cut biscuits with a 1 1/2-inch round cutter.
  • Step #11 Place biscuits on lightly greased baking sheets.
  • Step #12 Bake at 425° for 10 to 12 mins or until lightly browned.
  • Step #13 Split biscuits; serve sliced pork in biscuits with mustard.
