Sun-dried Tomato And Goat Cheese Log Recipe

Ingredients
  • 1 c sun-dried tomatoes packed in oil with herbs, drained & thinly sliced
  • 1 loaf crusty bread, cut into 1/2-inch-thick slices & lightly toasted
  • 1 1/2 tbsps capers, drained
  • 1 (11-oz) log goat cheese, thinly sliced & brought to about room temp
  • 2 tbsps olive oil
  • 2 garlic cloves, thinly sliced

Directions
  • Step #1 Heat oil over medium-high heat in a nonstick skillet.
  • Step #2 Sauté garlic 30 seconds.
  • Step #3 Add capers & tomatoes to pan; sauté 2 mins or until heated through.
  • Step #4 Remove pan from heat, & allow mixture to cool.
  • Step #5 Arrange cheese on platter, & spoon tomato mixture over cheese.
  • Step #6 Serve with toasted bread rounds.
