Cheese Puffs Recipe

Ingredients
  • 4 large eggs
  • 1/4 tsp cayenne
  • 2 tbsps minced chives or scallions
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 c all-purpose flour
  • 1 c shredded extra-sharp Cheddar
  • 1/2 tsp salt

Directions
  • Step #1 Heat oven to 400° F.
  • Step #2 Lightly coat 2 cookie sheets with vegetable cooking spray.
  • Step #3 In a medium saucepan, salt, mix 1 c of water with the butter, oil, & cayenne.
  • Step #4 Bring to a boil.
  • Step #5 Remove from heat & add the flour all at once.
  • Step #6 Stir with a wooden spoon until the ingredients form a smooth paste.
  • Step #7 With a wooden spoon, stir in the 1 egg until completely mixed.
  • Step #8 Repeat with the remaining 3 eggs.
  • Step #9 Stir in the Cheddar & chives.
  • Step #10 Using a tsp, drop balls of batter onto the cookie sheets.
  • Step #11 Bake 20 to 25 mins or until the puffs are firm & well browned.
  • Step #12 Serve warm or at about room temp.
  • Step #13 To keep for up to 2 days, cut a small slit in the side of each puff as soon as possible after removal from the oven.
  • Step #14 Cool completely.
  • Step #15 Store in an airtight container.
