Smoked Cheddar-stuffed Mushrooms Recipe

Ingredients
  • 2 oz smoked cheddar cheese, sliced
  • 1/2 tsp freshly ground black pepper
  • 40 medium button mushrooms (about 1 lb)
  • 1 tsp olive oil
  • 1 garlic clove, minced
  •  Cooking spray
  • 1 tsp water
  • 1/4 c dry breadcrumbs
  • 1/4 c minced shallots (about 1 large)
  • 1/2 tsp salt
  • 2 tbsps sliced fresh parsley

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Heat a small nonstick skillet over medium-high heat.
  • Step #3 Coat pan with cooking spray.
  • Step #4 Add minced shallots & minced garlic; sauté 2 mins or until tender.
  • Step #5 Place shallot mixture in a medium bowl.
  • Step #6 Remove stems from mushrooms; chop stems.
  • Step #7 Add sliced mushroom stems, freshly ground black pepper, salt, breadcrumbs, sliced parsley, & smoked cheddar cheese to shallot mixture; toss with a fork until mixed.
  • Step #8 Add olive oil & 1 tsp water; stir well to mix.
  • Step #9 Spoon about 1 tsp filling into each mushroom cap.
  • Step #10 Arrange mushrooms, filling side up, on a baking sheet.
  • Step #11 Bake at 400° for 20 mins or until filling begins to brown & cheese melts.
  • Step #12 Serve warm.
