La Norteña's Homemade Salsa Recipe

Ingredients
  • 1 whole garlic head
  • 3 c tomato juice
  • 6 jalapeño peppers
  • 6 ripe tomatoes (about 2 1/2 lbs)
  •  Cooking spray
  • 1/4 c fresh lime juice

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Remove white papery skin from garlic head (do not peel or separate the cloves).
  • Step #3 Wrap in foil wrap.
  • Step #4 Bake at 350° for 1 hr; cool 10 mins.
  • Step #5 Separate cloves; squeeze to extract garlic pulp.
  • Step #6 Discard skins.
  • Step #7 Prepare grill or broiler.
  • Step #8 Place tomatoes & peppers on a grill rack or broiler pan coated with cooking spray; grill or broil for 15 mins or until skins are blackened, turning every once in awhile.
  • Step #9 Peel tomatoes & peppers.
  • Step #10 Place half of garlic pulp, & half of peppers in a mixer, half of tomatoes, & process until coarsely sliced.
  • Step #11 Pour garlic mixture into a bowl.
  • Step #12 Repeat procedure with remaining garlic pulp, tomatoes, & peppers.
  • Step #13 Stir tomato juice & lime juice into garlic mixture.
  • Step #14 Note: Serve remaining salsa with baked tortilla chips or over grilled fish.
