Crudités With White Bean Hummus Recipe

Ingredients
  • 1 tsp salt
  • 2 cloves garlic, peeled
  • 2 tbsps lemon juice
  •  vegetables (see below)
  • 1 can (15 oz.) small white beans, drained
  • 1/4 c extra-virgin olive oil
  • 1/2 tsp fresh-ground pepper
  • 1/2 tsp fresh thyme leaves

Directions
  • Step #1 In a food processor/blender, garlic, fresh thyme leaves, mix beans, olive oil, salt, lemon juice, & pepper.
  • Step #2 Whirl until smooth.
  • Step #3 Spoon into a bowl & set on a platter.
  • Step #4 Around hummus, arrange colorful vegetables such as sliced red and/or orange bell peppers, sliced carrots, & blanched asparagus spears & broccoli florets.
  • Step #5 Note: Nutritional analysis is per tbsp hummus.
