Edamame Hummus With Pita Crisps Recipe

Ingredients
  • 3 tbsps tahini (sesame-seed paste)
  • 1/2 c fresh flat-leaf parsley leaves
  • 3 tbsps fresh lemon juice
  • 4 tsps extravirgin olive oil, divided
  • 1/2 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1/2 tsp salt
  • 6 (6-inch) pitas, split in half horizontally
  • 1 1/2 c frozen blanched shelled edamame (green soybeans)
  • 1/2 tsp paprika
  • 3 tbsps water
  • 2 garlic cloves, peeled

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Arrange pita halves in a single layer on oven rack.
  • Step #3 Bake at 350° for 15 mins or until crisp, & cool completely on a wire rack.
  • Step #4 Break each pita half into about 6 chips.
  • Step #5 Prepare edamame according to package directions, omitting salt.
  • Step #6 Place 1 tbsp oil, cumin, coriander, salt, & garlic in a food processor/blender, & pulse 2 to 3 times or until coarsely sliced.
  • Step #7 Add the edamame, parsley, water, tahini, & juice; process 1 min or until smooth.
  • Step #8 Spoon the hummus into a serving bowl.
  • Step #9 Drizzle with 1 tsp oil, & sprinkle with paprika.
  • Step #10 Serve with pita crisps.
