Curried Mushroom Turnovers Recipe

Ingredients
  • 1/2 tsp curry powder
  • 14 sheets frozen phyllo pastry, thawed
  • 1/2 c plain low-fat yogurt
  • 2 tbsps all-purpose flour
  • 1/4 tsp ground cumin
  • 3 1/2 c minced fresh mushrooms
  •  Butter-flavored vegetable cooking spray
  • 1/2 tsp salt
  • 3/4 c minced shallots
  • 2 tbsps sliced fresh cilantro
  • 1/4 tsp pepper

Directions
  • Step #1 Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
  • Step #2 Add mushrooms & shallots; cook, stirring constantly, 11 mins or until mixture appears dry.
  • Step #3 Combine flour & next 4 ingredients; add to mushroom mixture in skillet.
  • Step #4 Cook, stirring constantly, 3 mins or until thickened.
  • Step #5 Remove from heat; stir in the yogurt & cilantro.
  • Step #6 Cut 1 phyllo sheet in half lengthwise (keeping remaining phyllo sheets covered).
  • Step #7 Lightly coat phyllo halves with cooking spray, & fold halves in half lengthwise to form strips.
  • Step #8 Working with 1 strip at a time, spoon 1 tbsp mushroom mixture onto base of strip.
  • Step #9 Fold right bottom corner over mixture to form a triangle; keep folding back & forth into a triangle to end of strip.
  • Step #10 Repeat entire procedure with remaining phyllo sheets & mushroom mixture.
  • Step #11 Place triangles, seam side down, on baking sheets.
  • Step #12 Lightly coat tops with cooking spray.
  • Step #13 Bake at 400° for 15 mins or until golden.
  • Step #14 Serve as soon as possible.
