Opposing-sides Two-bean Dip Recipe

Ingredients
  • 2 small garlic cloves, divided
  • 3 tbsps grated Parmesan cheese
  • 1/4 tsp ground cumin
  • 1/2 tsp salt, divided
  •  Garlic Pita Chips
  • 1/2 c (2 oz) finely shredded reduced-fat cheddar cheese
  • 1 (16-oz) can Great Northern beans, drained
  • 1/2 c sliced onion, divided
  • 1/4 c sliced green onion tops
  • 1 (15-oz) can black beans, drained
  • 1 (4.5-oz) can sliced green chiles, drained
  • 1/2 tsp black pepper, divided

Directions
  • Step #1 Combine the Great Northern beans, 1/4 tsp pepper, 1/4 tsp salt, Parmesan cheese, 1/4 c sliced onion, & 1 garlic clove in a food processor/blender; process until smooth.
  • Step #2 Spoon white bean mixture into a bowl on one side; set aside.
  • Step #3 Combine the black beans, chiles, 1/4 tsp pepper, 1 garlic clove, 1/4 c sliced onion, 1/4 tsp salt, & cumin in a food processor/blender; process until smooth.
  • Step #4 Spoon black bean mixture into other side of bowl containing white bean mixture.
  • Step #5 Sprinkle top cheddar cheese & green onions between 2 bean dips.
  • Step #6 Serve with Garlic Pita Chips.
