Cracked Crab Vinaigrette Recipe

Ingredients
  •  Coarse-ground black pepper
  • 4 cooked Dungeness crabs (about 2 lb. each), cleaned & cracked
  • 1/2 tsp Worcestershire
  • 1/4 c lemon juice
  • 2 c thinly sliced celery
  • 2 tsps each sliced fresh basil, oregano, & thyme leaves
  • 1 c thinly sliced green onions (about 1 bunch, including tops)
  • 1 c extra-virgin olive oil
  • 1/2 c red wine vinegar
  • 1/2 c sliced parsley
  • 2 tbsps minced garlic
  •  Salt

Directions
  • Step #1 Rinse crabs under cool running water to remove any bits of loose shell; pat dry & put In a large-ish bowl.
  • Step #2 In a medium bowl, thyme, vinegar, oregano, mix olive oil, green onions, lemon juice, basil, garlic, parsley, & Worcestershire.
  • Step #3 Stir in celery & add salt & pepper to taste.
  • Step #4 Pour vinaigrette over crabs & mix carefully to coat.
  • Step #5 Cover up & chill at least 2 hrs or up to 1 day, carefully mixing once or twice.
  • Step #6 Nutritional analysis is per appetizer serving.
