Grilled Herb Grit Cakes Recipe

Ingredients
  • 8 tsps grated fresh Parmesan cheese
  • 1 tsp sliced fresh thyme
  • 3/4 c uncooked coarse-ground yellow grits
  • 1 tsp sliced fresh basil
  • 1/2 tsp kosher salt
  • 1 tbsp butter
  • 1 tsp sliced fresh parsley
  • 2 1/4 c water
  •  Cooking spray
  • 2 garlic cloves, minced

Directions
  • Step #1 Combine the first 4 ingredients in a medium saucepan; bring to a boil.
  • Step #2 Gradually add grits, stirring constantly with a whisk.
  • Step #3 Reduce heat, & let simmer 10 mins or until thick, stirring every once in awhile.
  • Step #4 Stir in basil, thyme, & parsley.
  • Step #5 Pour grits into an 8-inch square baking dish coated with cooking spray.
  • Step #6 Press plastic wrap onto surface of grits; chill for 2 hrs or until firm.
  • Step #7 Prepare grill.
  • Step #8 Cut grits into 8 (2 x 4-inch) portions.
  • Step #9 Grill grit cakes for 6 mins.
  • Step #10 Carefully turn grit cakes over, & sprinkle each cake with 1 tsp cheese.
  • Step #11 Grill for 6 mins or until lightly browned & heated through.
