Shrimp And Crunchy Vegetable Spring Rolls With Sweet And Sour Chili Sauce Recipe

Ingredients
  • 2 c mixed spring greens
  • 1/2 c spicy sprout mixture (optional)
  • 4 c Shrimp Salad with Lemon-Herb Vinaigrette (tails removed from shrimp)
  • 8 (12-inch) rice paper wrappers
  •  Sweet & Sour Chili Sauce

Directions
  • Step #1 Soak 1 wrapper In a large-ish shallow dish of water 30 to 45 seconds or just until pliable.
  • Step #2 (If soaked too long, it will fall apart.
  • Step #3 ) Drain on paper towels.
  • Step #4 Add 1/2 c Shrimp Salad about 2 inches from edge of wrapper.
  • Step #5 Top with 1/4 c greens and, if desired, a few sprouts.
  • Step #6 Fold in sides, & roll tightly away from you.
  • Step #7 Repeat soaking & stuffing procedures with remaining wrappers & filling.
  • Step #8 Slice diagonally into 3 pieces, place on a platter, & serve this with Sweet & Sour Chili Sauce.
