Chicken Tinga With Sweet Chipotle Sauce Recipe

Ingredients
  • 1 (4- to 6-oz) skinned & boned chicken breast
  • 1/4 c ketchup
  • 1/4 c freshly squeezed orange juice
  • 2 tbsps honey
  • 3 garlic cloves, minced
  • 1/4 c sherry vinegar
  • 1 1/2 c sliced onion, divided
  • 1/4 tsp salt
  • 1 tbsp canola oil, divided
  • 1 canned chipotle chile in adobo sauce, minced
  • 1/8 tsp freshly ground black pepper
  • 1/4 c tomato paste

Directions
  • Step #1 Place chicken breast In a large-ish saucepan; cover with cold water.
  • Step #2 Bring to a boil, reduce heat, & let simmer 10 mins or until chicken is done.
  • Step #3 Remove chicken from pan; let cool 30 mins.
  • Step #4 Shred chicken breast.
  • Step #5 Heat 2 tsps oil In a large-ish skillet over medium-high heat; add 1/2 c onion.
  • Step #6 Sauté 6 mins or until golden brown.
  • Step #7 Remove onion from pan; mix shredded chicken & onion.
  • Step #8 Heat remaining 1 tsp oil in skillet; add in the remaining 1 c onion & garlic.
  • Step #9 Cover up & cook 5 mins or until onion is tender.
  • Step #10 Stir in chipotle & remaining ingredients.
  • Step #11 Cover up & let simmer 20 mins.
  • Step #12 Process chipotle mixture in a mixer until smooth.
  • Step #13 Combine chicken & chipotle sauce.
  • Step #14 Serve with fresh sopes.
