Peppered Garlic Confit With Prosciutto Recipe

Ingredients
  • 1 tsp coarsely ground black pepper
  • 3 tbsps olive oil
  •  Chopped fresh parsley (optional)
  • 1/4 c sliced prosciutto (about 1 oz)
  • 2 whole garlic heads
  • 24 (1/2-inch-thick) slices diagonally cut French bread baguette

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Remove white papery skin from garlic heads (do not peel or separate the cloves).
  • Step #3 Wrap each head separately in foil wrap.
  • Step #4 Bake at 350° for 1 hr; cool 10 mins.
  • Step #5 Separate cloves; squeeze to extract garlic pulp.
  • Step #6 Discard skins.
  • Step #7 Heat olive oil in a small saucepan over med-heat/flame.
  • Step #8 Add sliced prosciutto & coarsely ground black pepper; cook 5 mins, stirring every once in awhile.
  • Step #9 Combine garlic pulp & oil mixture in a small bowl, stirring with a fork until well mixed.
  • Step #10 Serve with bread slices.
  • Step #11 Garnish with parsley, if desired.
