Beef Tenderloin Bruschetta With Brown Butter Recipe

Ingredients
  • 1 (4-oz) beef tenderloin steak, trimmed (1 inch thick)
  • 1/8 tsp salt
  • 1 1/2 tsps canola oil
  • 1/2 tsp yellow mustard seeds, divided
  • 1/4 tsp salt
  • 1/8 tsp ground turmeric
  • 2 tbsps lime juice
  • 16 (1/4-oz) diagonal slices French bread baguette, toasted (1/2 inch thick)
  •  Cooking spray
  • 1 1/2 tsps butter, melted
  • 1/2 tsp sugar
  • 1/2 c sliced mango
  • 2 tbsps sliced fresh cilantro
  • 2 tsps finely sliced serrano chile
  • 1/8 tsp pepper

Directions
  • Step #1 Combine first 7 ingredients in a small bowl; cover & let this stand at about room temp 15 mins.
  • Step #2 Heat oil in a small nonstick skillet over medium-high heat.
  • Step #3 Add 1 mustard seed to pan; cook this until seed pops (about 90 seconds).
  • Step #4 Add remaining seeds; stir this to coat with oil.
  • Step #5 Cover up & cook seeds for 30 seconds or until they begin to pop, carefully shaking the pan.
  • Step #6 Stir in butter & cover.
  • Step #7 Cook until 1 second passes between pops, shaking pan constantly (about 30 seconds).
  • Step #8 Remove from heat.
  • Step #9 Scrape mustard seed mixture into mango mixture; stir carefully.
  • Step #10 Let stand 5 mins.
  • Step #11 Heat pan over medium-high heat.
  • Step #12 Coat pan with cooking spray.
  • Step #13 Sprinkle top beef with 1/8 tsp salt & pepper.
  • Step #14 Add beef to pan; cook 3 mins on each side or until desired degree of doneness.
  • Step #15 Let rest 5 mins.
  • Step #16 Slice across the grain into very thin slices.
  • Step #17 Divide beef slices evenly among baguette slices.
  • Step #18 Top each bruschetta with 1 1/2 tsps mango mixture.
  • Step #19 Serve as soon as possible.
