Pecan-swiss Pennies Recipe

Ingredients
  •  Kosher salt (optional)
  • 3/4 c butter, softened
  • 2 c all-purpose flour
  • 1 (8-oz) block Swiss cheese, grated
  • 3 tbsps honey-Dijon mustard
  • 1/2 c pecans, finely sliced
  • 3/4 tsp salt

Directions
  • Step #1 Beat butter at medium speed with a heavy-duty stand mixer until fluffy.
  • Step #2 Add flour & next 4 ingredients, beating just until mixd.
  • Step #3 Cover up & chill 2 hrs.
  • Step #4 Shape dough into 2 (8-inch-long) logs; wrap each log in plastic wrap, & chill 8 hrs.
  • Step #5 Cut each log into 1/4-inch-thick slices, & place on parchment paper-lined baking sheets.
  • Step #6 Sprinkle top evenly with kosher salt, if desired.
  • Step #7 Bake at 350° for 10 to 12 mins or until lightly brown.
  • Step #8 Transfer to wire racks to cool completely.
